Pancake Soup

For the pancake take 1 cup of flour, 1 egg, dash of salt, white pepper, nutmeg and table spoon of finely chopped parsley. About 3/4 cup of milk.

Place all ingredients in a bowl and mix it to a not too thick batter.

Now Fry them in a pan until not to brown both sides.

Seafood Soup, (an easy one)

For the Soup

Buy some whole firm fish, take the fillets off.

Use the fish-bones for the fish stock. Blanche the bones first before starting to cook the soup

In a soup-pot add cold water, sliced onion, carrots, celery, leek, bay-leaf, and some salt, to give the stock flavour. After about 45minutes boiling, take fishbones out. In a separate pan saute, in olive oil 1cm  big cut fishfillets, finely sliced carrots, leek, celery together for 5 minutes.

Now place everything in into the fishstock and let it boil softly for another 30 minutes add some seasoning if nessecary.

To eat the fish soup give separat garlic crostini.
